A few clear, watery whites turn into a glossy, billowing foam that can lift a souffle, crown a pie as meringue, or lighten a sponge cake — all from trapping air in a network of egg proteins. The stand mixer does the hard, tiring part hands-free, but the technique still matters: a speck of grease, whites straight from the fridge, or thirty seconds too long on high, and the foam either never builds or collapses into a grainy, weeping mess. What's actually happening is worth a sentence, because it explains every rule that follows. Egg whites are mostly water and protein. When you whip them, you unravel those proteins and stretch them around the air bubbles you're beating in, forming a stable foam. Anything that interferes with the proteins linking up — fat, oil, even a trace of yolk — stops the foam from building. And once the foam is built, over-whipping stretches those protein walls until they break, which is why perfect whites can turn grainy and curdled in seconds. Respect the fat rule and stop at the right moment, and the rest is straightforward.

Start with a spotlessly clean, grease-free bowl

This is the rule that matters most, and the one beginners skip. Fat is the enemy of egg foam.Even a trace of oil, butter or egg yolk on the bowl or whisk will stop the whites from whipping to full volume, or keep them slack and soupy no matter how long you run the mixer. So before you start, make sure the bowl and the wire whip are completely clean and dry. If you're unsure, wipe them with a little lemon juice or vinegar on a paper towel to cut any invisible film, then dry them. Separate the eggs carefully — and mind the temperature

Separate your eggs cleanly, because even a speck of yolk(which is pure fat) in the whites will hold the foam back. The safest method is to separate each egg over a small empty bowl first, then tip the clean white into the mixer bowl, so one broken yolk doesn't ruin the whole batch. As for temperature: cold eggs separate more cleanly, but room-temperature whites whip to greater volume and whip faster, because the proteins are more relaxed and the foam builds more easily. The practical routine is to separate the eggs straight from the fridge, then let the whites sit out for 20 to 30 minutes to come up to room temperature before you whip.

Use the wire whip attachment

Egg whites are a job for the wire whip(the balloon whisk), never the flat beater or the dough hook. The speed ramp: start low, build gradually

Don't start on high. Begin on a low to medium speedto break up the whites and create a base of small, uniform bubbles — a foam built on small bubbles is far more stable than one whipped fast into big, fragile ones. Once the whites turn frothy and opaque, step the speed up to medium-high to build volume. This gradual ramp is the difference between a fine, stable foam and a coarse one that weeps and collapses. Reading the stages: frothy, soft peaks, stiff peaks

Egg whites pass through clear stages, and knowing them lets you stop at exactly the right point.

Frothy

The whites are loose, bubbly and still translucent. This is the stage to add an acid like cream of tartar or a squeeze of lemon juice if your recipe uses one — a pinch helps stabilize the foam so it's more forgiving and less likely to over-whip.

Soft peaks

The foam is white, glossy and holds a peak that curls over on itself when you lift the whisk. Soft peaks are what you want for folding into a souffle base, a mousse or a sponge cake batter, where you need the foam to still stretch and combine without deflating.

Stiff peaks

Keep going and the foam thickens until it holds a peak that stands straight up with only the tip curling, and it looks smooth and glossy. Stiff peaks are the target for meringue, for piping, and for anything that needs to hold its shape in the oven. This is also the point to stop and watch closely, because the next stage is the one you don't want.

Adding sugar for meringue — and when

If you're making meringue, when you add the sugar is as important as how much. Add it too early, while the whites are still loose, and it weighs the foam down and slows it from building volume. The reliable method is to whip the plain whites to soft peaks first, then add the sugar gradually— a spoonful at a time with the mixer running — and keep whipping to stiff peaks. Adding it slowly lets each addition dissolve into the foam, which is what gives a finished meringue its smooth, glossy body. A properly made meringue should feel smooth, not gritty, when you rub a little between your fingers; if it's still gritty, the sugar hasn't fully dissolved and it needs another minute. Superfine (caster) sugar dissolves fastest and is the safest choice.

Over-beating.This is the classic error a stand mixer makes easy, because it whips faster than you expect and doesn't get tired. Over-whipped whites can't be rescued — you have to start over — so stop the moment you reach the peak your recipe wants and watch the last thirty seconds closely.

Any trace of fat.A greasy bowl, a plastic bowl, or a speck of yolk in the whites will stop the foam from ever reaching full volume. If your whites simply won't stiffen after several minutes, fat contamination is the most likely culprit — start again with a scrupulously clean metal or glass bowl and carefully separated whites.

Starting too fast. Whipping on high from the start builds big, unstable bubbles that collapse and weep. Ramp up from low so the foam is built on fine bubbles.
