How to use a cooling rack

A wire cooling rack is one of the humblest, cheapest tools in a baker's kitchen, and it does one thing that genuinely matters: it lets air circulate underneathyour baked goods as they cool. Why airflow matters: the soggy-bottom problem

Start with the problem the rack solves. As anything baked cools, it releases steam, and steam that can't escape condenses back into water. Leave cookies on a solid tray, a cake in its pan, or a loaf flat on the counter, and that condensation collects against the bottom, making it soft, damp or soggy — the "soggy bottom" every baking show warns about. A cooling rack lifts the food on thin wires so air circulates underneath as well as around it, letting the steam disperse in every direction. When to cool in the pan first, and when to turn out

The one nuance is timing, because not everything goes straight onto the rack. Many bakes — cakes especially— are fragile straight from the oven and need to firm up in their pan for a short while before you turn them out, or they'll break. The usual approach is to let a cake rest in its pan on the rack for the time the recipe says (often around ten minutes), then run a knife around the edge, turn it out onto the rack, and let it finish cooling with air underneath.
