How to choose a loaf pan

Pan material, size and finish quietly decide how your bread bakes. Here is how to pick the right loaf pan - and when the lidded Pullman is worth it.

A loaf pan is the least glamorous tool in a baker's cupboard and one of the most consequential. The pan is what actually shapes your bread and, more than most people realize, decides how it bakes — how deeply the crust colors, whether the sides set before the middle, and how cleanly the loaf turns out. Two bakers can follow the same recipe and get different bread because one used a thin, dark nonstick pan and the other a heavy light-colored one. This guide walks through the three things that matter when you choose a loaf pan — material, size and finish — plus the special case of the lidded Pullman pan, and when to grease or line.

The good news is that a loaf pan is a cheap, long-lived tool, so it's worth buying one good pan rather than a stack of flimsy ones. A well-made pan will outlast most of your other bakeware, and getting the material and size right the first time means every loaf you bake in it comes out a little more predictable. Start with the material

Material is the first decision because it changes how the pan conducts heat, and heat conduction is most of what a pan does. The four you'll actually see on shelves are aluminized steel, glass, dark nonstick steel and silicone, and they behave quite differently.

Aluminized steel — the baker's default

Aluminized steel — steel bonded with a layer of aluminum — is what most serious home bakers reach for and what many bakeware makers build their loaf pans from. It heats evenly and fairly gently, holds its shape without warping, and gives a reliable golden crust rather than a scorched one. A heavier-gauge aluminized-steel pan is the safe, do-everything choice for yeast bread, quick breads and pound cakes alike. Glass (Pyrex-style)

Tempered glass pans are inexpensive, let you watch the crust color through the sides, and are easy to clean and non-reactive. The trade is that glass heats slowly but then holds and radiates heat hard, so it tends to brown the bottom and sides of a loaf more aggressively than metal — great for a deeply crusted quick bread, less ideal for a delicate crumb. Glass is heavy and can crack with sudden temperature changes, so avoid moving it from a cold fridge straight into a hot oven. For casseroles and banana bread it's a fine, cheap workhorse.

Nonstick (dark-coated steel)

Dark, coated nonstick pans release loaves easily and clean up with a wipe, which is why they're so common. The catch is the color: a dark surface absorbs more radiant heat, so it browns crusts faster and harder than a light pan at the same oven temperature. That can mean an over-dark bottom on a loaf that's still pale on top. If a dark pan is what you own, the usual fix is to drop the oven temperature by about 25°F from what the recipe calls for and check doneness a little early. Coatings also wear over years of use, so treat the surface gently — no metal knives in the pan.

Silicone

Flexible silicone loaf pans pop bread out with a simple push and never need greasing, which is genuinely convenient. But silicone is a poor conductor of heat, so crusts stay pale and soft and the loaf can bake unevenly, and a floppy pan full of batter is awkward to move in and out of the oven — most people set it on a baking sheet for support. Silicone suits soft-crusted quick breads, muffins and easy release far more than it suits a crusty artisan loaf. Treat it as a convenience tool, not your main bread pan.

Getting the size right

The second decision is size, and it matters more than it looks because a recipe written for one pan size can overflow or bake flat in another. There are two things to understand: the footprint (the pan's dimensions) and the loaf-weight rating you see on packaging and in recipes.

The two standard footprints: 9x5 vs 8.5x4.5

Almost all standard loaf pans come in one of two sizes: the larger 9 x 5 inch and the slightly smaller 8.5 x 4.5 inch. They sound nearly identical, but the 9x5 holds noticeably more volume, so a recipe developed for an 8.5x4.5 pan will sit lower and bake into a shorter, wider loaf in a 9x5 — and the reverse can overflow. If a recipe specifies a size, match it; if it doesn't, the 8.5x4.5 tends to give a taller, more domed sandwich loaf, while the 9x5 is the more common default for quick breads. 1-lb, 1.5-lb and 2-lb — what the numbers mean

You'll also see loaf pans and recipes described by loaf weight: 1-lb, 1.5-lb and 2-lb. This is a rough measure of how much dough the pan is built to hold, and it's the same language bread machines use, which is handy if you cross between the two. A 1-lb loaf is a small pan for one or two people; 1.5-lb is a common household size; 2-lb is a big family loaf that maps to the roomy 9x5 footprint. Light vs dark finish and browning

Finish is the detail most bakers overlook, and it's a real variable. A light, shiny pan reflects radiant heat and browns gently; a dark or dull-finished pan absorbs it and browns harder and faster. That's why the same recipe can come out perfectly golden in one pan and too dark on the bottom in another. Neither is wrong — you just have to know which you own. If you like a pale, tender crust, choose a light pan; if you like a deeply browned one, a dark pan gets you there sooner. When you switch a recipe from the pan it was written for to a darker one, lower the oven by roughly 25°F and start checking early. The Pullman pan: square sandwich bread and pain de mie

The one specialist loaf pan worth knowing about is the Pullman, or pain de mie, pan — a tall, straight-sided pan with a sliding lid. Bake with the lid on and the dough is confined on all sides, so it rises into a perfectly square block with a fine, tight crumb and no domed top. That gives you uniform square slices, ideal for sandwiches, toast and anything where you want every slice the same shape. Bake with the lid off and it behaves like a tall regular loaf pan. One caution particular to the Pullman: don't overfill it, because with the lid on the dough has nowhere to go, and an overproofed loaf can push the lid off or bake into a dense, close crumb.

When to grease, when to line, when you can skip it

Even a good nonstick or seasoned pan benefits from a little insurance, and the right approach depends on what you're baking. For most yeast breads and quick breads, a thin coat of butter, oil or baking spray on the bottom and sides is enough to release the loaf cleanly. For sticky batters — a wet banana bread, a sugary pound cake, anything with fruit that can weld to the pan — line the long dimension with a strip of parchment (a "sling") that overhangs the two long sides, so you can lift the whole loaf straight out. A dedicated nonstick or well-kept aluminized-steel pan can often be run bare for lean bread doughs, but greasing costs nothing and saves the occasional heartbreak of a loaf that tears leaving the pan. Whatever you do, let the loaf cool in the pan for only a few minutes before turning it out onto a rack — leave it too long and steam softens the crust and makes it stick.

How many pans, and matching pan to the bread

For most home bakers, two pans cover the field: one good heavy aluminized-steel pan in a standard size for everyday sandwich and quick breads, and, if you bake square sandwich loaves, a lidded Pullman. Buy the sturdy pan first — a warping, thin pan is a false economy that bakes unevenly and dents in the drawer. Match the pan to the bread you make most: gentle light-colored steel for a tender crumb, glass if you like a hard bottom crust and a low price, silicone only where easy release matters more than crust.
