How to make bread in a stand mixer
A stand mixer takes the hardest part of bread - the long knead - off your hands. Here's the whole process, from mixing the dough to a baked loaf, without a fabricated recipe.

A stand mixer earns its counter space the day you make your first loaf of bread in it. Kneading dough by hand is satisfying once and a chore forever after; the dough hook does that same work while you get on with something else, developing the gluten evenly and without the flour-dusted arms. The process itself isn't complicated once you see the whole shape of it: you combine the ingredients, knead with the hook on a low speed until the dough is smooth and elastic, let it rise, shape it, let it rise again, and bake. This guide walks through each of those stages and, just as important, the couple of rules — the right speed, a sensible batch size — that keep the job easy on the machine. Two ideas make everything below make sense. First, kneading is gluten development: working the dough lines up the proteins in the flour into a stretchy web that traps gas and gives bread its structure, and the dough hook does exactly that as it drags and folds the dough against the bowl. Second, bread dough is a load, especially a stiff, low-hydration one, so the mixer wants to knead it on a low speed and in a batch its motor can handle. Making bread in a stand mixer, stage by stage
1. Combine the ingredients
Start by bringing the dough together. Many bakers proof the yeast first if using active dry — stirring it into warm (not hot) liquid with a pinch of sugar until it foams — while instant yeast can go straight in with the flour. Put your flour, yeast, salt and any sugar or fat in the bowl, fit the flat beaterto start if you like (it mixes a wet, shaggy dough more evenly at the very beginning), and run the mixer on low while you add the liquid. Mix just until there's no dry flour left and you have a rough, shaggy mass. This is the moment to judge hydration: the dough should come together and clear the dry flour, tacky but not soupy. Keep salt and yeast from sitting directly together in concentrated contact for long, as salt slows yeast — mixing quickly sorts that out.
2. Switch to the dough hook and knead on low
Once the dough has come together, swap to the dough hook and knead on a low speed— on a KitchenAid that's around speed 2, and most manufacturers explicitly warn against kneading dough at high speeds because it strains the motor and can overheat it. Let the hook work the dough for several minutes. You'll watch it change: from a rough, sticky mass to a smoother ball that gathers around the hook and starts to pull cleanly away from the sides of the bowl. That "cleaning the bowl" behavior is a good visual cue that the gluten is developing. If the dough stays stubbornly stuck all around the bowl, it may be a touch wet — add flour a spoonful at a time; if it's tight and dry and the machine is straining, a little water helps. 3. Check the dough with the windowpane test
Kneading time is a guide, not a rule, so judge the dough by feel rather than the clock. Properly kneaded bread dough is smooth, elastic and springs back when you press it. The classic check is the windowpane test: tear off a small piece and stretch it gently between your fingers. If it stretches thin enough to let light through without tearing, the gluten is well developed and you're done; if it tears quickly, give it another minute or two on the hook and test again. Under-kneaded dough makes a dense, tight loaf; over-kneading is hard to do with a home mixer on low but not impossible over a very long run, so test rather than just walking away for fifteen minutes.
4. First rise (bulk fermentation)
Now the yeast does its work. Form the dough into a ball, put it in a lightly oiled bowl, cover it so it doesn't dry out, and leave it somewhere warm-ish to rise until it's roughly doubled in size. Time depends on the recipe, the yeast and the room — often something like an hour or two, but go by the doubling, not a number. A finger poked into the dough should leave a dent that springs back slowly. This first rise builds both the volume and the flavor of the loaf, so don't rush it; a cool, slow rise generally tastes better than a hot, fast one. 5. Shape the loaf
Once risen, gently deflate the dough to knock out the big gas bubbles, then shape it. For a sandwich loaf, pat it into a rectangle and roll it up tightly into a log the length of your pan, pinching the seam closed, and set it seam-side down in a greased loaf pan. For a free-form hearth loaf, shape it into a taut round or oval and set it on a lined tray or into a floured proofing basket. Shaping with a little tension on the surface helps the loaf hold its form and rise up rather than out. 6. Second rise (proof)
The shaped loaf needs a second, shorter rise before it bakes. Cover it and let it proof until it looks puffy and has grown noticeably — for a pan loaf, until it crowns just above the rim; for a free-form loaf, until a gently poked dent springs back slowly but not all the way. Under-proofed dough bakes up dense and can split or burst in the oven; over-proofed dough can collapse. This stage is quicker than the first rise because the yeast is already active. While it proofs, get the oven fully preheated, because bread wants to hit a hot oven.
7. Bake to an internal temperature, not a clock
Bake according to your recipe's temperature, but judge doneness by the loaf, not the timer. The most reliable test is internal temperature: most lean breads are done around the 190-210°F range, while enriched doughs with egg and butter finish a little lower. An instant-read thermometer takes the guesswork out for a couple of dollars. A well-baked loaf is deeply colored, sounds hollow when you tap the base, and slides out of the pan cleanly. Then the hardest step: let it cool on a wire rackbefore slicing — cutting a hot loaf tears the crumb and lets steam escape, leaving it gummy. Cooling finishes the bake.
Speed and batch size: protecting the motor
The one thing that turns easy bread into a strained, overheating machine is asking too much of the motor, so two rules matter. First, knead on a low speed— dough is developed by time on the hook, not by spinning it fast, and high speed just heats the motor and can throw the machine around.
