How to knead dough in a stand mixer

The mixer does the heavy work, but a few things still trip people up: the wrong hook, too high a speed, and not knowing when to stop. Here's how to knead dough right.

A stand mixer turns kneading from a ten-minute arm workout into a hands-off step — but it isn't quite set-and-forget. Get the hook, the speed and the timing right and you get a properly developed dough with a strong gluten network; get them wrong and you either under-develop the dough or, less often, stress the machine. Here's the whole routine, start to finish, and how to tell exactly when the dough is done.

Start with the right attachment. Kneading is the job of the dough hook — the spiral or C-shaped hook — not the flat beater or the whisk. The flat beater is for creaming and general mixing and the whisk is for aerating eggs and cream; neither develops gluten the way a hook does. Most bakers combine the ingredients into a shaggy, rough mass first — either on low with the flat beater or by hand — then switch to the dough hook once there are no dry pockets of flour left, and let the hook take over the actual kneading.

Then keep the speed low. This is the single most common mistake: cranking the dial up to make kneading faster. Bread dough should be kneaded on a low setting — typically the second speed on a standard dial — because that's what the mixer's gearing is built to sustain under load. Higher speeds don't knead better; they overwork the motor, heat the dough, and can make the whole machine rock and "walk" across the counter as the hook drags a stiff dough around the bowl. Slow and steady is how the gluten develops evenly.

Go by feel, not the clock. Most doughs take somewhere in the range of a handful of minutes on the hook, but time is only a rough guide — hydration, flour and dough size all change it. Watch the dough instead. As the gluten develops it stops clinging to the sides of the bowl, gathers around the hook, and turns from a rough, sticky lump into a smooth, elastic ball that pulls back when you press it. When the dough is cleaning the sides of the bowl and looks smooth and springy, you're close.

Confirm it with the windowpane test — the one reliable check that the gluten is ready. Tear off a small piece of dough and stretch it slowly between your fingers. If it stretches thin enough to go translucent — you can almost see light through it — without tearing, the gluten is fully developed and the dough is kneaded. If it tears before it thins out, it needs a few more minutes on the hook. Test again until you get that thin, translucent membrane.

Step by step: kneading dough in a stand mixer

1. Combine first, then switch to the hook

Mix the ingredients into a rough, shaggy mass before you commit to kneading — on low with the flat beater, or by hand in the bowl — so there are no dry pockets of flour. Then fit the dough hook. Starting the hook in an already-hydrated dough gives it something to work against and keeps flour from flying out of the bowl on the first turn.

2. Keep the speed low

Knead on a low setting — usually the second speed on a standard dial, and never near the top of the range. Low speed is what the gearing is built to sustain, it develops gluten evenly, and it keeps the machine from overheating or walking across the counter under a stiff dough. If the mixer starts to rock, slow down or steady it; don't speed up.

3. Watch the dough, not the clock

A dough is kneaded when it looks and behaves right, not when a timer says so. Look for it to pull away from the sides of the bowl, wrap around the hook, and turn smooth, elastic and springy. A wetter dough stays tackier and a stiff dough firms up sooner, so the same number of minutes means different things — trust what you see over any fixed time. 4. Confirm with the windowpane test

Stretch a small piece of dough thin. If it goes translucent without tearing, the gluten is developed and you're done; if it tears, knead a few minutes more and test again. This one check is more reliable than any clock, and it's worth doing every time until you can read a dough by eye.

Signs you've over-kneaded (rare, but real)

With a machine it is possible, if uncommon, to go too far. An over-kneaded dough starts to feel tight and then oddly slack and sticky again as the gluten breaks down, it can look wet and shiny, and it may tear rather than stretch in the windowpane test after it had passed earlier. Most home bakers under-knead rather than over-knead, but if you walk away and leave a mixer running for a very long time on a small dough, it can happen — another reason to watch the dough instead of the clock.

Why you still finish some doughs by hand

A stand mixer does the bulk of the work, but a brief hand finish is still worth it on many doughs. Turning the dough out for a minute or two of hand kneading lets you feel the texture directly, brings a slightly under-developed dough the rest of the way, and shapes it into a smooth ball for its first rise.
