Why is my bread machine loaf sinking in the middle?

A loaf that rises tall and proud through the cycle and then caves in across the top — a sunken, crater-like middle instead of a domed crown — is one of the most common and most fixable bread machine disappointments. The cause is almost always the same story in different forms: the loaf over-rose. It expanded faster and further than its gluten structure could support, and when the final bake could not set the walls in time, the whole thing collapsed under its own weight, sinking in the middle where the structure is weakest. It helps to hold the underlying idea in mind as you read: bread rises because yeast produces gas, and that gas is held in a stretchy net of gluten. A good loaf rises to just the right point and then bakes, setting that net firm while it is still full and domed. The fix is to reduce the liquid slightly — a tablespoon or two at a time on your next bake — and to check the dough during the first knead: it should form a smooth, slightly tacky ball that clears the sides of the pan, not a loose, sticky puddle. Too much yeast

Counterintuitively, more yeast does not mean a better rise — it means a faster, wilder one that runs out of control. Too much yeast makes the dough surge up quickly and over-proof, stretching the gluten past what it can hold, so the loaf peaks early and then sinks as the gas escapes. Warm weather and over-proofing

Yeast works faster when it is warm, so the same recipe that is perfect in winter can over-proof and sink in a hot kitchen or a summer heatwave. If your loaves started collapsing when the weather turned, this is very likely the cause: the dough races through its rise before the bake stage catches it. The fixes are to use cooler liquid (straight from the fridge on a hot day), to slightly reduce the yeast in warm conditions, and to avoid the long delay timer on hot days, since a loaf sitting and slowly proofing in a warm pan for hours is especially prone to over-rising. Temperature is an invisible variable most people never think to blame, but it is one of the most common reasons a reliable recipe suddenly starts sinking when nothing else changed.

Too much sugar or fat

Rich doughs are more fragile. Sugar feeds the yeast and can accelerate the rise, while too much fat — butter, oil, eggs — tenderizes and weakens the gluten structure that has to hold the loaf up. A sweet or enriched loaf that sinks may simply be too rich for the structure to support at that height. Two mechanical causes round out the list. First, opening the lid during the rise or bake lets warm air out and can jolt a delicate, fully-proofed loaf into collapsing — so resist checking on it late in the cycle, and if you need to peek, do it early during kneading, not during the final rise. Second, heavy add-ins — too much fruit, nuts, seeds or whole grains — weigh the dough down and can drag a risen loaf back down in the middle, because the structure is carrying more than it can lift. Keep a short note of what you changed each bake, and within two or three loaves you will have isolated the cause.
