The one skill that matters: taring to zero

Taring tells the scale to treat whatever is currently on it as zero, which is what lets you ignore the weight of the bowl entirely. Put your empty mixing bowl on the scale, press tare, and the display returns to zero even though the bowl is clearly sitting there. Now anything you add reads as its own weight, not the weight of the bowl plus the ingredient. That single trick is the whole reason a scale is faster than cups: you never have to do arithmetic or dirty a separate container. Switching units: grams vs ounces

Scales are sold with a resolution— the smallest increment they read, usually 1 gram on a kitchen scale or 0.1 gram on a finer one — and it's worth understanding what that difference does and doesn't matter for. For baking, a 1-gram resolution is almost always plenty: flour, sugar, butter and liquids are measured in the tens, hundreds or thousands of grams, and a gram either way is noise. Where finer 0.1-gram resolution earns its place is tiny quantities— a few grams of yeast, salt or a leavener, or, outside baking, dosing coffee, where being a gram off is a meaningful percentage of a small total. Calibration, batteries and auto-off

A few practical quirks separate a scale you trust from one that frustrates you. Auto-off is the most common annoyance: many scales power down after a couple of idle minutes to save the battery, and if you're slow assembling a recipe it can switch off mid-bowl, taking your tare with it and forcing you to start the current weighing over. The fix is simply to keep things moving, or to give the platform a nudge to wake it before it sleeps; some scales let you disable or lengthen the timer. On batteries, most kitchen scales run on replaceable cells rather than a rechargeable pack, so it's worth keeping a spare on hand — a scale that reads erratically or won't hold zero is very often just telling you the battery is low.
