Attaching the dough hook

Fitting the hook is quick, but do it with the mixer unplugged or switched off. On a tilt-head, lift the head and lock it up (or lower it, depending on your model's design), slide the hook up onto the drive shaft, press it up against the pin, and twist to lock it into place — the same push-and-turn bayonet fitting the flat beater uses. On a bowl-lift, lower the bowl arm first, attach the hook, then raise the bowl to mixing position. Give the hook a gentle tug to confirm it's locked before you start. It only fits one way, so if it won't seat, rotate it and try again rather than forcing it.

How long to knead

Kneading time depends on the dough and the recipe, but most yeasted doughs take somewhere in the range of five to eight minuteson the hook — noticeably faster than hand kneading because the machine works so consistently. Rather than watching the clock alone, watch the dough. As it develops, it transforms from a rough, shaggy, sticky mass into a smooth, elastic ball that pulls away from the sides of the bowl and gathers around the hook, usually leaving the bowl mostly clean. The most reliable way to tell whether the gluten is developed is the windowpane test. Stop the mixer, pinch off a small piece of dough, and gently stretch it between your fingers into a thin sheet. If the dough is properly kneaded, it will stretch thin enough to become translucent — you can hold it up to the light and almost see through it — without tearing. That translucent "windowpane" means the gluten network is strong and elastic, and the dough is ready to rise. Don't over-flour the dough

One of the most common mistakes is adding too much flour. Kneading at too high a speed

Overloading the bowl
