Why is my bread machine loaf crumbly?

A loaf that crumbles when you slice it is almost always too dry - too much flour, too little liquid or fat. Here's how to find which, and fix it.

A dry dough doesn't develop the soft, cohesive crumb that holds a slice together, so it bakes up tight, dry and crumbly. The causes all feed into that dryness in different ways — too little liquid, too much flour, not enough fat, mis-measured ingredients — and there are a couple of non-dryness culprits too, like slicing the loaf while it's still hot. The single most useful habit for diagnosing any bread machine problem is to watch the dough as it kneads. Too little liquid

The most direct cause of a dry, crumbly loaf is simply not enough liquidin the dough. Bread needs enough water (or milk) to fully hydrate the flour and build a soft crumb; short it, and the loaf bakes dry and falls apart. If the dough looked stiff and dry during kneading, this is almost certainly the issue. Too much flour, and how you measure it

The flip side of too little liquid is too much flour, and the usual reason is how it's measured. Scooping a measuring cup directly into the flour bag compacts it and can pack in far more flour than the recipe intends — sometimes 25% or more — which throws off the whole flour-to-liquid balance and gives you a dry, crumbly loaf. The single best fix is to weigh your flour with a kitchen scale, which removes the biggest source of variation in baking. Not enough fat

Fat — butter, oil — does more than add flavor: it tenderizes the crumband helps the loaf hold together and stay moist.
