Bread machine cycles explained

Basic, whole wheat, rapid, dough, gluten-free, jam - your bread machine's settings aren't interchangeable. Here's what each cycle actually does and when to use it.

The row of buttons on a bread machine can be baffling: basic, whole wheat, French, rapid, sweet, gluten-free, dough, bake, jam. It's tempting to just press "basic" for everything, but the cycles genuinely differ, and choosing the right one is one of the biggest levers you have over how a loaf turns out. Each cycle is a preset program of kneading, rising and baking with its own timings and temperatures, tuned for a particular kind of dough. A whole-wheat cycle allows the longer rise heavy flour needs; a rapid cycle sacrifices some quality for speed; a dough cycle skips baking entirely so you can shape and bake in the oven. One thing to know up front: every machine is a little different, and the exact cycle names, timings and options vary by model, so your manual is the final authority on your machine. Basic / white

The basiccycle (sometimes "white" or "standard") is the workhorse and the default for most everyday loaves made largely with white bread flour. It runs a standard sequence of knead, rise, knead, rise and bake at a normal pace, producing a classic sandwich loaf. If you're not sure which cycle a recipe wants and it's an ordinary white or lightly-mixed loaf, basic is the safe choice. Whole wheat

The whole wheat cycle is tuned for heavier whole-grain flours, which need more time to knead and a longer rise because the bran interferes with gluten development and the dough is denser. It typically runs longer than basic to give the dough that extra working and proving, producing a better-risen whole-grain loaf than the basic cycle would. French

The French(or "crusty") cycle is designed for lean, low-fat, low-sugar doughs like a French bread, which have little more than flour, water, yeast and salt. It usually involves a longer rise and a crust tuned to be crisper and chewier, giving the open, crusty character French-style bread wants. Rapid / express / quick

The rapid or expresscycle bakes a loaf faster by shortening the rise times, often using more yeast to compensate. It's genuinely useful when you want bread in a hurry, but there's an honest trade-off: the shorter rise usually means a slightly denser loaf with less developed flavor, since flavor and structure both build with time. Use it when speed matters more than the last bit of quality, and follow a recipe written for the rapid cycle (with its adjusted yeast) rather than just running a normal recipe faster.

Sweet

The sweet cycle is for doughs high in sugar and fat— enriched breads, brioche-style loaves, breads with a lot of butter, egg, milk or honey. Because sugar browns faster, this cycle typically bakes at a lower temperature or with a gentler crust setting so the outside doesn't scorch before the inside is done. Use it for rich, sweet loaves; running them on basic can leave the crust too dark.

Gluten-free

The gluten-freecycle is tuned for gluten-free flours and batters, which behave completely differently from wheat dough — they're more like a thick batter than a kneadable dough and don't need the repeated kneading and knock-down that develops gluten (which isn't there). Dough (and pizza / pasta dough)

The dough cycle is one of the most useful settings on the machine: it mixes, kneads and gives the dough its first rise, then stops without baking. You take the risen dough out to shape and bake in the oven. This is how you make cinnamon rolls, dinner rolls, pizza, bagels and any shaped bread the machine's single pan can't produce. Bake-only, jam and other specialty cycles

Beyond the main cycles, machines often add specialty programs. A bake-onlysetting bakes without kneading or rising — handy for adding baking time to an under-done loaf, or for baking dough you mixed elsewhere.
