The soft start: why you always begin low

The one rule that ties every speed together is to start low and ramp up, and it exists to solve two very common problems. The first is the flour cloud: begin mixing dry ingredients on medium or high and you'll blow flour and powdered sugar across the kitchen; a low start keeps it in the bowl until it's wetted down. The second is shocking delicate mixtures: whipping cold egg whites or cream hard from the first second builds big, unstable bubbles that collapse later, giving you a coarse, weepy result, whereas a slow start builds a fine, stable foam you then take up to speed.
