How to measure flour by weight

The reason is simple and a little unsettling once you see it. A cup is a measure of volume, but flour is compressible — how much actually fits in the cup depends entirely on how you fill it. The problem has a name among bakers: the scoop-and-pack error. There are several common ways people fill a measuring cup, and they give noticeably different amounts:

Dip and sweep — plunging the cup straight into the flour bag and leveling it off — compresses and packs the flour, so you get the most. Spoon and level — spooning flour lightly into the cup and sweeping the top flat — gives much less, because the flour stays fluffy and aerated. And simply scooping from a freshly stirred bag versus a settled, tightly packed one changes things again. The gap between the lightest and heaviest way of filling the same cup can be on the order of 20 to 30 percent. The idea is that the total flour in a recipe is always called 100%, and every other ingredient is expressed as a percentage of that flour weight. So a dough might be described as 100% flour, 70% water, 2% salt, and 20% starter.

That sounds abstract until you use it. If your flour is 1,000 grams, then 70% hydration means 700 grams of water, 2% salt means 20 grams of salt, and 20% starter means 200 grams — all just multiply the flour weight by the percentage. 2. Press tare to zero it.The display should read 0 with the bowl's weight subtracted out.

3. Add flour until you hit the target weight. Spoon or pour it in gently and watch the number climb to the gram called for. Overshot? Just scoop a little back out — a freedom you never had with a leveled cup.

4. Tare again and add the next ingredient.Re-zero, add the sugar or water to its target, tare, and continue through the recipe. Everything reads from zero, so there's no arithmetic.
