How to store flour
Flour keeps a lot longer than people think - or a lot less, if you store it wrong. Here is how to keep white and whole-grain flour fresh, pest-free and ready to bake.

Flour looks like the most shelf-stable thing in the kitchen — a dry powder in a paper bag — and for white flour that's mostly true. But how you store it decides whether it lasts many months in good condition or turns stale, rancid or, worst of all, home to a colony of pantry bugs. And not all flour is equal: whole-grain and whole-wheat flours carry the oily germ of the grain, which means they spoil far faster than white flour and need to be kept somewhere quite different. The basics: airtight, cool, dark and dry
Whatever the flour, the four storage rules are the same, and getting them right handles most of the job. Airtightis the big one: transfer flour out of its paper bag into a sealed container — a lidded canister, a food-grade bin, a heavy zip bag — because the original bag isn't airtight and does nothing to stop moisture, odors or, crucially, insects getting in. An airtight container keeps the flour dry, stops it absorbing smells from the pantry, and forms the first line of defense against pests. Cool matters because heat speeds up spoilage, so a cupboard away from the oven, the dishwasher and any warm appliance is better than one beside a heat source. Dark helps because light and heat both degrade flour over time, which is why a closed cupboard beats an open shelf in a sunny kitchen. And dryis non-negotiable: moisture is flour's enemy, encouraging clumping, mold and spoilage, so keep it well away from the sink, the kettle's steam and any damp corner. Why whole-grain flour spoils faster
Here is the single most important thing most people don't know about storing flour: whole-grain and whole-wheat flours go rancid far faster than white flour, and it comes down to what's in them. When wheat is milled into white flour, the oily germ and the bran are removed, leaving mostly the starchy endosperm, which is stable and keeps for a long time. Whole-grain flours keep the germ and bran, and the germ contains natural oils — and oils go rancid. Exposed to air, warmth and light, those oils oxidize and the flour develops an off, bitter, stale or faintly paint-like smell and taste that carries straight into whatever you bake. This is why a whole-wheat, rye, spelt or fresh-milled flour that's been sitting warm in the pantry can ruin a loaf even though it looks fine. The same logic applies to other higher-oil flours like nut flours. The practical upshot: whole-grain flours can't be treated like white flour, and where you keep them matters enormously.
Keep whole-grain flour in the fridge or freezer
Because it's the oils that spoil, the fix is cold. Store whole-grain and whole-wheat flours in the refrigerator or freezer, not the pantry, especially if you won't use them up quickly. Cold dramatically slows the oxidation that turns the germ oils rancid, so flour that would last only a month or two at room temperature keeps for many months chilled and even longer frozen. Put the flour in an airtight container or a sealed heavy bag before it goes in — both to keep it dry and to stop it picking up fridge or freezer odors, which flour readily absorbs — and label it with the date. How long flour actually keeps
Shelf life depends almost entirely on the type and the storage. White flours— all-purpose, bread flour, cake flour — are the long-keepers: stored airtight in a cool, dark, dry pantry they stay good for many months, and often past a year, and cold storage extends that further still. Whole-grain floursare the short-keepers because of those germ oils: at room temperature they're best used within a month or two before the flavor starts to turn, though refrigerating or freezing them stretches that to many months. The honest test is your nose: fresh flour smells neutral or faintly sweet, while flour that's gone off smells sour, bitter, musty or like old oil paint — if it smells wrong, don't bake with it, because the taste carries through. Any sign of mold, damp clumping or, obviously, insects means it goes in the bin. Use older flour before newer, and don't stockpile more whole-grain flour than you'll get through in a reasonable window. Keeping out pantry pests
One of the real reasons to store flour airtight is to keep out — and contain — pantry pests, chiefly the little beetles and moths often called weevils. Flour can arrive from the store already carrying microscopic insect eggs, which later hatch in a warm pantry, and open or paper-bagged flour is also an open invitation to bugs already living nearby.
